Let me tell you, I have been on a baking spree! I have had so many orders coming in and I COULD NOT be happier! Sure, it’s eaten into my sleeping and exercising schedule : ), but I don’t care, I’ve so enjoyed doing all of it!
I made a cake that resembled a beehive and 50 cupcakes to go with that last week.
I know you’ve seen pictures on Pintrest or somewhere of the cupcakes that look like high heels. I made those too, and they weren’t perfect, but I thought that they were pretty darn cute! I know what I did wrong, so I have learned from my mistakes and know exactly what to do differently next time.

I’m usually pretty boring when it comes to coloring icing, but I’ve been doing so much that isn’t white, that I feel like I need to jazz it up when there isn’t any color.

And man have I been busy! On top of living with my parents for sixty days (chronicled here) and moving into our new house and doing all of the work and renovations involved with that, I’ve also been seeing a lot of this chick, doing a lot of baking, throwing a Housewarming party, and training for a half marathon. We took a trip to Jamaica with our BCF (Best Couple Friends), which was a total blast. Oh and then my “baby” is going to be two in less than three months. Yeah. There’s that.
I’m on a pretty serious weight loss plan and it’s going pretty well so far. I would like to get down to pre-baby weight by the end of September and I feel more confident than I’ve felt in a while.
We are somewhat settled in the new crib, so I hope that means that I will be able to write on a more consistent basis. Like maybe once a week.
Thanks for still sticking around for this very extended hiatus and I promise that the next time I write, I’ll have something way more interesting to write about than a three and a half month break.

This past weekend was disgusting! An entire weekend of rain and mud and cold. I’m supposed to get in at least two more long runs before the half marathon in two weeks, but it was too gross to run either day. Oops!
On Sunday I was tired of being cooped up all weekend, so I fixed one of my favorite treats, Triple Chip Blondies, then dumped a scoop (or two) of ice cream on them while they were still hot and they warmed me right up from the nasty weekend. Next time it’s yucky outside, whip yourself up a batch. They are super easy and super delicious. Oh, and I promise they taste just as good on a hot summer day : ). Enjoy!
Triple Chip Blondies
1 c. butter
2 c. packed brown sugar
2 t. vanilla
2 c. flour
1 t. salt
2 c. chips (you can use 2/3 c of 3 flavors of chips, but I usually max out at 2)
Preheat oven to 350. Grease a 9×13 pan. Cream butter and sugar. Add in eggs and vanilla, mix well. Throw in flour (ok, you don’t have to actually throw it) and salt, mix until just blended. Mix in chips. Evenly pour into 9×13 pan. Bake for 30 minutes or until top is golden brown.
I’ve been baking and baking and baking some more these past couple of weeks! With Thanksgiving kicking off the start of the madness! I fixed some pumpkin cupcakes for a friend. Then made some treats for my fam. Followed by cupcakes and a cake for a co-worker’s daughters 5th birthday. Then breakfast cakes for our realtor to hand out to his clients. Finally more treats for the holiday, which will really start today! On the hopper I’ve got Poor Man’s Toffee (so yummy and so easy), Buckeyes for my native Ohio in-laws, Coconut Orange Snowballs and finally Cheesecake Brownies. I plan on spending most of today in the kitchen and I am so happy to do just that!

I am now. Well not me, but whatever I end up naming my alleged baking business.
This past weekend I was asked to make cupcakes for a wedding celebration for a friend. Four-hundred and eighty mini cupcakes, four batches of icing and 480 chocolate shaped shells later, I had accomplished something I have been dreaming about for years. I actually made baked goods for a real event (and someone paid me to do it). Thankfully, my trusty right hand woman made the trip down from Nova to help me. I hope that she had as much fun as I did.
I got nothing but rave reviews and CANNOT wait to do it again…
A few days ago I threw a shower for one of my BFAWs (Best Friends at Work). She is expecting a baby girl on Thanksgiving Day, but we are depending on the “Curse of Work Showers” to send her into early labor as it has the last three pregnant employees/wives of employees in the end of October. With the exception of a very last minute venue change, the shower was a success with a lot of fun, laughs, games, gifts and baked treats!
The weather was questionable most of the day, but cleared up just in time for the shower and was sunny with a little chill in the air. It was a perfect day for a shower.
I made cake pops and strawberry cupcakes for the occasion. I also had two cake orders for Saturday, so it was a baking filled few days in our house. I loved every second!
Can’t wait until baby Chloe’s big debut!
One of my favorite and best pals at work is eloping in Tahiti or Bora Bora. I can’t remember which one, but she’s going to both. Yes, you can hate her too. She had her bachelorette party at the bay a couple of weekends ago which meant it was time to bake!
I whipped up some chocolate chip cookies and some lemon vanilla cookies and they were gobbled up by the dozen beautiful ladies at the party. Unlike other people, I don’t give out my recipes, but she might, so you can stalk her page if you are interested. The lemon vanilla cookies are so pretty when they come out of the oven and their taste matches their appearance.
